So You Want to Make Some Cheese....


Friday May, 18, 2007 thirteen of us amateur cheese makers came to Lubbock, Texas to Nancy Patton's Haute Goat Creamery to learn about making fresh goat cheese and pair exceptional wine with cheeses.

Friday night as we all met for the first time at Nancy's home, we were given our own apron and clogs which Nancy had personalized with our names. Our tour began in the milking parlor, the cheese room and aging room where such yummy tequilla abby, Cabra al Vino and Bonnie Bleu are aged.

Sit down lunch in Nancy's beautiful home with Chef Chris Wilson preparing some of Nancy's fresh chevre! Later that afternoon, we paired wine with different cheeses from around the world. Needless to say we did a good job drinking all the wine and of course, the cheese!




Two of our class cheese experts (both are physical therapist by trade)making fresh chevre! Were we all enjoying it or what!


Curds being ladeled into cheese molds. Our creations such as figs or a sprig of rosemary on top of the cheese was put away for each of us to take home on Sunday.
