Cheesecake made with Teahive Cheese from the Beehive Cheese Company.
Just to know alittle about Teahive Cheese, it's a semi-firm, Jersey Cow's Milk cheese hand rubbed with a blend of black tea and pure bergamot oil.  This complexity of the tea-rubbed rind with orange notes continues through the finish.  As a 1st place 2012 ACS winner, this feel good cheese is also eaten by itself or on a cheese plate and pairs well with fruit forward or floral wines as well as pilner beers. Recipe by Stephanie Arambul. cheese expert @ HEB in Houston which she changed from the version on Beehive Cheese's website.

For the crust:
5 oz shortbread cookies, broken
2/3 c shelled unsalted pistachios
1/4 c sugar
1/2 c grated Teahive cheese
2 tbl unsalted butter, melted

For the cheesecake:
2 c sugar
3 tbl sugar
6-8 oz pkg cream cheese
1/2 c all purpose flour
1 c sour cream
1 1/2 tsp pure vanilla extract
3/4 tsp cardamom
5 lg eggs
1 tsp finely cursted earl grey tea

Romao or queso al romero in Spanish means cheese with Rosemary.  This raw artisan sheep's milk cheese comes from La Mancha, Spain which is also home to the famous Manchego cheese. 

Romao is hand-rubbed with oil (lard) and fresh rosemary, then aged in caves for 8 months.  The result is a manchego cheese since its related where the rosemary and oil have permeated the cheese to complement its full flavor.

NOW available in 2 pound wheels.

I like to serve this with a Austin's Shock Top Chocolate Wheat beer during the winter or Pliny the
Elder by Russian River Brewing Co (Whenever I can get it!)
 

Big John's Cajun Mac-n-Cheese Recipe 

8 oz uncooked elbow macaroni
2 c shredded Big John's Cajun Cheese
1/2 c grated Parmesan Cheese ( I also use Pecorino Romano if that's all you have
2 c whole milk or heavy cream
1/4 c butter
2 1/2 tbl all purpose flour
 
Cook macaroni and drain.  In a saucepan, melt butter and slowly stir in flour to make a roux.
Slowly add milk to the roux, then stir in cheese until its melted and sauce is thick.
 
Place macaroni in casserole and pour cheese sauce over.  Bake for 20 minutes uncovered.

What a beautiful display of Spanish Iberico cured meats to serve on a butcher board.
 
The dry-cured Serrano, Jamon iberico and bellota ham with chorizo and iberico lomo are the primary charcuterie meats.  Fill in with stuffed olives, piquillo peppers and guindilla peppers.  You can also add your own condiments like dried figs, marcona almonds or carmelized walnuts.  This pic is courtesy of La Tienda, a online Spanish company selling all things Spain. 
 
A side of your favorite Spanish cheeses like Drunken Goat, El Trigal 1 yr manchego and beautiful Leonora goat cheese is fun with a crusty loaf of bread.
